Honora Carberry

Banqueting & Events Manager, Honora Carberry, has been part of the Tulfarris team for 12 years. Honora has a passion for helping couples create truly magical experiences.

Honora combines her creativity and organisational skills with her love for managing events. Her enthusiasm for planning is infectious, her motivation is seeing the joy of a dream day come to life.

Eddie McDermott

Head Chef Eddie McDermott has always had a passion for food. Eddie and his culinary team have carefully created a number of wedding packages filled with culinary delights which are accompanied by fine wines.

He prides himself on using quality, locally sourced seasonal ingredients. Eddie’s signature dish is 12 hour pot roasted feather blade of Irish beef, with butternut squash puree, confit onion baby spinach and port jus.

Kate Hannigan

Banqueting & Events Coordinator, Kate Hannigan, has been part of the Tulfarris team for 4 years. Kate delights in meeting wedding couples on the start of their journey and working with them to plan the details of their dream wedding day.

Derek Bellini

Operations Manager, Derek Bellini, a native of Montreal, Canada, joined the Tulfarris Team in 2009. Derek brings energy and a wealth of food and beverage experience. Derek sets the high standards that our wedding couples enjoy. His attention to detail is second to none. Derek prides himself on delivering a wonderful experience for a dream wedding day.

Darren Byrne

Recently appointed as General Manager at Tulfarris Hotel and Golf Resort, Darren is a fountain of knowledge when it comes to hotel operations. He is fervent about ensuring wedding couples and their guests enjoy the perfect day. Having served as Food and Beverage Manager in the past, Darren is passionate about good service.
